I've shared several different ones before, but here's another bread recipe I really enjoy with a nice warm bowl of soup. All the below zero weather recently makes me enjoy these kinds of meals. This one is easier and faster than most breads because it's not a yeast bread, but a quick bread. It only uses baking powder / soda and so does not have any of the "touchiness" of a yeast bread. This bread is really fast to mix up, you do not need to wait for

It is a heavy, somewhat dense bread better suited to eating as a side with soup than making a sandwich as it's pretty heavy and crumbly for that. It's higher in protein than almost any bread you could buy too. The original recipe inspiration was thanks to http://www.eatingwell.com/recipes/honey_oat_quick_bread.html . Though as normal, I don't usually follow anyone's recipe exactly. :)
Honey Oat Bread
1 cup rolled oats (with a bit extra for the pan)
2 1/3 cups whole-wheat flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons salt
1 cup plain yogurt
1 egg
1/4 cup coconut oil
1/4 cup honey
3/4 cup coconut milk (or other milk you like)
Heat oven to 375°F. Butter or coconut oil a loaf pan and sprinkle a handful of oats in the pan. Tip the pan back and forth to coat the sides and bottom with oats. This makes the outside of the loaf look pretty, and pop out of the pan nice and cleanly once it's done baking.
Mix all dry ingredients. Mix all wet ingredients in separate bowl. Gently add the two and mix just till there are no remaining dry lumps. Don't overmix as this can make the bread tougher. Pour into loaf pan and sprinkle a few more oats on top.
Bake the loaf till browned on top and a toothpick inserted in the center comes out clean, 40 to 50 minutes. (It’s normal for the top to crack.) Let cool in the pan for about 15 minutes. If you try to dump the loaf out right away, it will probably crack apart. I happen to know this from experience. :) Run a table knife around the edges to loosen it and turn it out onto the rack or cutting board to continue cooling. It's wonderful if enjoyed while still a bit warm!

Really really enjoyed your Fathers Christmas eve stew, going to be my go to pre Christmas meal from now on with just a few tweaks .Hope all is going fine for you and burley in the snowy mountains of Northern Wyoming.

Just lookin for a really yummy bread recipe that other people in my fam. can also enjoy, but that doesn’t use wheat. I could try yours and just substitute the flours.
